Pumpkin Ice Cream Pie

Pumpkin pie
It's Thanksgiving time of year and a good home cooked turkey dinner with all the trimmings wouldn't be complete without pumpkin ice cream pie. Here's a recipe that you can have the kids help you with the night before.

Ingredients

For the crust

  • 1/2 cup chopped walnuts
  • 1/4 cup melted butter
  • 1 1/4 cup crushed graham cracker cookies
  • 1/4 cup sugar

For the filling

  • 1 pint vanilla ice cream
  • 1 can pumpkin
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 2 cups whipping cream

Cooking Instructions

Creating the crust
In a pie pan, take mix graham cracker and melted butter. Add in the sugar and walnuts. Form a nice 1/2" crust along the sides of the pie pan. Bake the crust for 5 minutes in a 350 degree temperature.

Creating the filling
Place vanilla ice cream in a large mixing bowl and stir it into the bowl slowly. Add brown sugar, cinnamon, and pumpkin pie filling. Mix in whipping cream and then place in freezer. Remove when the filling is firm. Pour filling into pie crust and serve.
